Q. I’m learning all about farmed vs. wild fish. Where does red snapper fall in this debate? And, where does it come from?
A. Red snapper is wild fish. It mainly comes from the Gulf of Mexico.
Q. Since red snapper is wild fish, is it seasonal?
A. In theory, red snapper can generally be caught anytime but the government regulates the industry to prevent the fish from becoming extinct. It’s pretty unpredictable when they will let us fish. Sometimes the quotas are per month, other times per year. Basically, government biologists go out and take a look at the fish. If they feel there are more small fish than big fish, they assume we are over-fishing so we have to take a break and give the fish a chance to grow.
Q. Wow, I never knew that. When it comes to cooking, what are the best ways to prepare red snapper?
A. Red snapper is a firm, white fish so it’s best grilled or baked.
Q. Is red snapper available whole and in fillets?
A. Yes. It can be purchased whole; filleted, with the skin on or off; and as steaks, which have bones.
