When I was growing up, people who were serious about baking did not use boxed cakes. Fast forward to 2020 and you bet we’re all looking for the perfect store-bought cake hacks! This year more than ever try using cake mixes for your Pesach desserts. With most of you probably avoiding lots of company, there’s no better time to make it easier on yourself. These recipes are quick and easy to make, and definitely don’t skimp on flavor.

Without further ado, Kosher.com and @cookupawedding present:

Top 10 Things You Can Do With Your Simple Kosher-For-Passover Gefen Cake Mix!

1. Naked Cake

Split the batter into three pans. Then make homemade frosting. Fill with fruit and top with flowers and you will have a jaw-dropping, stunning cake that no one will even dream came from a box. Get the recipe.

2. Turn it into orange cake.

Use yellow cake mix as a base for a fresh orange cake! Replace the water with orange juice, add a teaspoon or two of orange extract, and throw in a bit of fresh orange zest. Delicious!

3. Cake Balls

Use cake mix to make cake balls for cake pops. Mix and bake the cake mix as the box instructs, then crumble the cake, using a fork to break up any large pieces. Next, add 12 ounces of canned frosting to the crumbled cake and mix to combine. Finally, roll the cake into one-inch balls. Chill the cake balls in the fridge for several hours. Melt candy coating in the microwave and then dip the cake balls in the coating. Place the dipped cake balls on wax paper and allow them to harden.

4. Trifle

Bake the cake as directed, then break into small pieces and place into a trifle bowl or small, pretty dishes. Layer with homemade frosting and fruit of your choice! (Follow Rivky Kleiman’s method here.)

5. Cake Batter Milkshakes

– 2 cups vanilla ice cream

– 1 cup milk*

– 1/2 cup vanilla or yellow dry cake mix

– Sprinkles (optional)

Combine all ingredients in a blender except sprinkles. Blend until smooth. Fold in sprinkles if desired. Pour into cups and serve immediately, garnished with more sprinkles if desired.

6. Three-Ingredient Apple Cake

  • 4 cups chopped apples
  • 1 box Gefen yellow cake mix
  • 3/4 cup margarine, melted

Heat oven to 350°F. Spray bottom of 9- x 13-inch pan with cooking spray.

Place chopped apples in pan. Top with dry cake mix, and pour melted margarine over top, making sure to cover the top with butter as much as you can. Bake 45 to 50 minutes or until bubbly. Serve warm. Enjoy!

7. Crumble It: Easy Baked Berry Crumble

Crumble leftover yellow cake on top of fresh or frozen berries and bake until bubbly and golden brown.

8. Amp Up The Chocolate

Add shavings of high-quality baking chocolate to chocolate cake mixes.

9. Make Waffles!

Like seriously pour batter into a waffle maker and eat cake for breakfast.

10. Ice Cream Cake

Bake cake in a 9- x 10-inch pan. Once cooled, cover in ice cream and top with sprinkles. Freeze cake and cut right before dessert.
