Moist Zucchini Muffins (Gluten Free)

Have a hard time getting your family to eat their veggies? Try serving these zucchini muffins. They’re irresistible… Hard to believe they’re kosher for Passover.

Ingredients

Main ingredients

  • 1/2 teaspoon salt

  • 1 cup oil

  • 4 eggs

  • 1/2 cup maple syrup

  • 2 small zucchinis, peeled and shredded

Directions

Prepare Muffins

1.

Preheat oven to 350 degrees Fahrenheit (180 degrees Celsius).

2.

In a large bowl, combine potato starch, ground almonds, sugar, baking powder, baking soda, cinnamon, and salt.

3.

In a separate bowl, whisk the oil, eggs, and maple syrup together.

4.

Stir into the dry ingredients until just moistened. (Do not overmix, as this causes settling.)

5.

Fold in the shredded zucchini.

6.

Fill lined muffin tins almost to the top.

7.

Bake for 30 minutes.

Notes:

Make sure that the maple syrup is kosher for Passover. Instead of muffins, this recipe can be made in a single 9×13 inchpan or two nine inch round pans. For a 9×13-inch pan, bake for one hour, and a little less for a nine inch round pan.

Delicious!! 2 desserts of honey instead of the maple syrup and half a cup of brown sugar. Next time I will not add any sugar.

Replacing Potato Starch For times other than Pesach, can I substitute tapioca or cornstarch like for like? I have both but no starch.

Zuchinni muffin ingredient substitute I don’t use maple syrup on Pesach, what can I substitute and how much?

Was a very big hit. I did Follow the suggestion of 1/2 cup of oil and I used 1/2 cup of unsweetened applesauce. Also used less sugar being that it had the maple syrup. But would definitely make this again.

Pretty good! The cup of sugar was unnecessary. I used 1/2 cup apple sauce and 1/2 cup oil instead of 1 cup oil as suggested, omitted the sugar in the dry ingredients, added raisins, and used 3 eggs instead of 4. The cake came out great and plenty sweet. The cup of sugar would have been too much.

I followed your suggestion of omitting the sugar, and used honey instead of maple syrup. I was disappointed that they were not sweet at all and ended up adding sugar to the second round of batter.
