Directions

Prepare the Brownie Chunks

1.

Preheat oven to 350 degrees Fahrenheit. Grease and flour eight-inch square pan.

In a large mixing bowl, combine melted margarine, sugar, eggs, and vanilla, mix by hand until completely combined. Add cocoa, flour, salt, and baking powder, mix until just combined.

3.

Pour batter into a prepared pan and bake for 25-30 minutes. The brownies do not need to be baked through, as they will be frozen. Allow brownies to cool completely, then cut into one-inch chunks, set aside.

Prepare the Ice Cream

1.

Using  an electric mixer, beat the Rich’s Whip in a large bowl. Slowly add eggs, one at a time. Add sugar and vanillas, and beat until mixture is smooth and sugar is dissolved.

2.

Pour chocolate chips and oil into a microwave-proof bowl. Microwave for two minutes, in 30 second increments, stirring halfway through. Stir until smooth. Allow to cool slightly.

3.

Pour melted chocolate chips into the ice cream mixture, beat until thoroughly combined. Fold in brownie chunks. Freeze overnight.

Double fudge chunk ice cream This ice cream was a huge hit! Can I substitute oil for the margarine in the brownies?

scoop Does this ice cream scoop nicely? Or is the brownie chunks to hard for that.

Hi Leal.
I think you would need to defrost it enough so the chunks would allow the scooper to go through it.
