Shakshuka Pulled Chicken Sandwich

My favorite part about this shakshuka sauce is that it is so versatile and easy! I made a big batch of the chicken and had the leftovers the next night as proper shakshuka — I reheated it in a large frying pan, then made a few indentations in the sauce with the back of a spoon and poured one raw egg into each indentation. Cover the pan to cook until the whites are set — about 5 minutes. This sandwich is more of a deconstructed shakshuka, so those who prefer to skip the egg can easily do so.

  • 2 pounds (1 kilogram) boneless, skinless chicken thighs

  • salt and pepper, to taste

  • 1–2 tablespoons Mina Harissa, spicy or mild

  • 1 (26-oz) (737-g) jar Mina Shakshuka sauce

  • 6 crusty rolls, such as ciabatta or French rolls

  • 2 avocados, sliced

  • 3 onions, sliced

  • 1 tablespoon vegetable oil

  • 6 eggs

Directions

Make the Sandwich

Season the chicken well with salt and pepper. Place in a slow cooker and add one to two tablespoons of harissa, depending on how spicy you like things. (I don’t love spicy food, and I found that a Tbsp of harissa really just imparted the peppery flavor without much heat at all.) Pour the shakshuka sauce in the pot and cover. Cook on low for about five hours or on high for about two and a half hours. Alternately, this can be cooked covered on the stovetop over a low flame for about two hours, or until very tender.

Remove the chicken from the pot and shred with two forks. Return to the sauce and cook an additional 10 minutes with the cover off. (This can be made a day or two ahead and then reheated.)

Sauté sliced onions in oil, seasoning to taste. Set aside. In a frying pan coated with cooking spray, fry six sunny-side-up eggs until the whites are set. Toast each roll and add a few slices of avocado and pulled chicken. Top with sautéed onions and egg.

Hi Miriam! Mina Shakshuka sauce is a product sold ready made, so you don’t have to make your own sauce. You can buy it in most kosher supermarkets in the tristate area, as well as directly from their website (https://www.casablancafoods.com/products/mina-shakshuka-16oz)
