Start Cooking

Prepare the Fish

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Rinse and then pat the fish dry. Optional: Combine the matzo meal with salt and pepper. Dish fish in mix and shake off excess. If you are not using matzo meal, simply salt and pepper the fish.

  3. Heat oil in a frying pan over medium heat and pan sear the fish until golden and crisp, about two minutes on each side. Drain on absorbent paper.

  4. Slice onions thinly and sauté with garlic until soft. Add ketchup, pinch cinnamon, brown sugar, pineapple chunks with their syrup, and half the water. Bring to boil and simmer for five minutes.

  5. In a separate bowl, combine the potato starch and remaining water, stirring until all clumps are dissolved. Add to simmering sauce. Return sauce to a boil until it thickens, stirring constantly. Season with salt and pepper to taste.

  6. Place fish in casserole dish and pour sauce on top. Bake for fifteen minutes.
