Hawaiian Chili Chicken

Ingredients

Main ingredients

  • 4 chicken bottoms

  • 1 tablespoon oil

  • 1 onion, diced

  • 1 red pepper, cut in strips

  • 1 green pepper, cut in strips

  • 1 (15-ounce) can Gefen Pineapple Tidbits, drained (reserve 1/2 cup liquid)

Directions

Prepare the Chicken

1.

Preheat oven to 350 degrees Fahrenheit.

Heat oil in a sauté pan over medium heat. Add onions and sauté until soft. Add peppers and sauté for another few minutes. Pour in pineapple tidbits and reserved pineapple juice, and cook for five minutes over low heat. Place this mixture in the bottom of a 9- x 13-inch pan.

Wash and dry chicken, and place in the prepared baking pan on top of pineapple mixture.

In a small bowl, combine ketchup, mayonnaise, sweet chili sauce, and honey. Pour over chicken.

5.

Cover and bake for one hour. Uncover and raise oven temperature to 425 degrees Fahrenheit. Bake for an additional 45 minutes. The vegetables release lots of liquid, so the chicken will not dry out.

Awesome recipe This was yummy. My whole family enjoyed! And it was easy to make. Would defiantly try this again.
