Fresh and Tangy Salad with Dairy Cucumber Dressing

A refreshing salad of crispy greens is always the perfect accompaniment to any party or heavier meal. This low-fat dressing can also double as a dip for crudités and is even great as a dip for tortillas or ruffled chips. Yup, I tried it!

Ingredients

Salad

  • 5 cups of your favorite lettuce, shredded

  • 2 cups arugula, shredded

  • 1 cup radicchio, shredded

  • 2 scallions, sliced

Dressing

  • 1 English cucumber, peeled

  • 1 cup plain Greek yogurt or leben

  • 2–3 Gefen Frozen Garlic cubes, defrosted

  • 1/4 cup vinegar (use gluten-free if necessary)

  • 1 teaspoon lemon zest (optional)

  • 1 teaspoon salt

  • 1 teaspoon sugar

  • 1/2 teaspoon black pepper

Directions

Prepare Salad

1.

Grate the cucumber in a food processor or with a box grater into a fine shred.

2.

Place all the dressing ingredients in a bowl and mix well until combined.

3.

Pour over salad ingredients immediately before serving.
