Fleishig Peas and Barley Soup

Prepare the Soup
In an eight-quart pot, sauté onions in oil until transparent. Add carrots and celery and continue sautéing for five minutes.
Add remaining ingredients. Cook for two to three hours.
To reduce cooking time, boil split peas for one minute and allow to stand for two hours before proceeding.
Omit split peas and increase barley to 1 cup.
