Several of my immediate family members are lactose intolerant and one cousin has a nut allergy so, whenever a friend or family member is joining us for a meal I always ask if there are any special considerations I need to be aware of. Most recently, a friend, planning on staying for the weekend said that her youngest son has celiac sprue. Not being too familiar with the disease I googled it and found out that Celiac disease, or Celiac sprue, is a chronic disorder of the small intestine caused by sensitivity to gluten (a protein found in wheat and rye and, to a lesser extent, in oats and barley). The condition causes pain; sores and other assorted ills as well as inhibiting the body's absorption of fats, proteins, carbohydrates, water, and essential vitamins. In layman's terms, the eating of bread, cereal, or anything that could possibly contain even trace amounts of gluten is a BIG no no. The primary treatment of celiac disease is to remove all gluten from the diet, which, for anyone who has tried, is easier said than done. Typically rice, soybean, potato, and corn flours are safe. Not wanting to single out one person with special food needs at each and every meal it was my mission to discover recipes that were delicious enough to be served to everyone yet still adhered to the strict no gluten rule. I turned to my friend Donna, an educator and mother of a child with spure and, as usual, she was fountain of information. She gave me advice and also access to a wonderful cookbook, written as a fundraiser by a mom with Celiac sprue whose special needs child has benefited from the gluten free diet. You can find out more about it at www.graysonsway.com The following recipes are all gluten free and were used by me at one time or another during the weekends that our friends have visited us. I can honestly say that if didn't know they were gluten free I never would have guessed. Many are simple and all are delicious. I focused on baked goods rather than meat or soup dishes as it is pretty easy to find recipes in those areas that don't include gluten. I showed all the recipes to my friend before I made them and she Ok'd them all. I found most of the more unusual ingredients (ones I couldn't readily find at my local grocery) at the health food store and local organic Co-op. One final note, make sure you read labels. Many ingredients contain modified food starches and other gluten ingredients. If you don't know, ask! Better to put the effort in up front than risk having a guest get ill.
