I approach cooking and menu planning for my annual, "school is almost over, let's celebrate while we can, Memorial Day picnic" in much the same way I do any other party I throw. I want food that is scrumptious, that will amaze and delight my guests, but can be prepared as much as possible in advance. My philosophy is "what good is entertaining if you never get to have any fun at your own party"? In laymen's terms, picnic can be a fancy way of saying "potluck." I'm all for sharing the responsibility and since but the word picnic has developed a much broader meaning, encompassing virtually any portable meal. So when the word picnic is attached to any invitation I try and create recipes that will transport to either the deck or park with a minimum of fuss So whether it's Memorial Day, too hot to cook day or just an I want to enjoy the outdoors kind of day, a picnic always makes a meal bit more festive and memorable.
