Apricot Chicken is the Sensation Your Pita Was Missing

Grilling season is not even close to over yet, so there's still plenty of time to get creative with your recipes. This apricot chicken, served with homemade pickled onions and french fries makes the perfect dinner for weekday or weekend! Plus, you can have your company and kids build their own, which means it's twice the fun!

Pita with Grilled Apricot Shnitzel and Fries

Main Ingredients:

1 pound (1/2 kilogram) chicken breasts, cut into strips
6 pitas
1 package frozen french fries 

Chicken Glaze:

1 tablespoon oil
6 tablespoons apricot preserves
3 tablespoons balsamic vinegar
1/4 teaspoon cayenne pepper
1/8-1/4 teaspoons fresh rosemary, chopped 
1/2 teaspoon kosher salt 
black pepper to taste (optional)

Pickled Onions:

1/2 cup purple onion, thinly sliced
1/4 cup red wine vinegar
2 teaspoons sugar
1 teaspoon salt
