It is wonderful and much appreciated to give information on freezing and defrosting food but none of your recipe authors share how to handle the defrosted food. Included must be explicit information on how that food should be reheated (covered, uncovered, how long and at what temperature, etc.) so as not to ruin a wonderfully prepared dish by overcooking when reheating and causing the dish to become too dry. If when preparing a dish for the freezer you undercook by 10-15 minutes and finish cooking in the oven when reheating, the author of the recipe should explicitly state that also. You are missing the most important piece of the puzzle.
