Can I sous vide skirt steak? What temp and for how long?

Could you? Certainly. Should you? Not necessarily. Because skirt steak takes minimal cooking time anyway, and is very tender when cooked for just a few minutes on the stove top, I don't think you'll find it to be significantly improved when cooked sous vide first. If you want to try it anyway, cook sous vide at 130 (for medium rare) for about 2 hours. Remove it from the bag, pat dry, and sear in a heavy bottom skillet that's very very hot, for no longer than 30 seconds- 1 minute per side. Let us know how it is!!
