    Delmonico Roast (Tevya Ranch)

    Hi, how long would I sous vide a Delmonico roast from Tevya Ranch (round, stringed)?

    So I ended up doing it for around 9 hours at 134 (my wife doesnt like when its so rare) and pan seared it after.. Very happy with how it came out.

    Hi Josh, how do you want it cooked? rare? medium rare? medium? I've never done a Tevya's delmonico, so some guesswork is involved here. Most kosher butcher's Delmonico is usually a rib cut, which is tender, so you wont need an exceptionally long time to cook it. I would guess in the 4-8 hour range, and at 125 for rare, 130 for medium rare, or 140 for medium. Try it and let me know how it goes!
