Not only are these cookies tasty, but their extremely soft as well making it a kid-friendly snack. With some chocolate chips, they really hit the spot for a kiddy afternoon snack with (or without) a cup of milk. 1) I pureed my own white beans. I used 8 teaspoons (a third of what the recipe calls for in the pureed form) and soaked them overnight then cooked them (without seasoning). I put them in the bowl whole with the eggs and then used the immersion blender to puree it. (Initially, I thought I'd make just half a recipe, but lucky for my family, I cooked enough beans for 1 1/2 times the recipe. The next time, this recipe was automatically doubled with a stash for a midnight snack in the freezer.) 2) I didn't have agave so I used honey instead. (I told my kids it's honey cookies l'chavod Y"T.) 3) These cookies are really awesome straight out of the oven. Whatever does not get eaten immediately, I suggest should go straight into the freezer. As time passed, it lost it's freshness and was not as tasty. The next time I made it, whatever my kids didn't eat right away, I put in the freezer and we had it for Shabbos party.
