I used light brown sugar so the cookies stayed a light color. Very soft and chewy, but a bit too sweet. Next time I'll add 3/4 cup white sugar and 1 1/2 cups chocolate chips. BTW, I used white spelt flour and made no adjustments to the recipe. You don't taste the oats at all. Delicious!
