A Look Into Faigy Murray’s Cookbook “My Pesach Kitchen” (+ Free Planner)

A food editor, author, recipe developer, and Instagram chef, Faigy Murray’s favorite place has always been the kitchen. Growing up surrounded by talented cooks and rich Hungarian food traditions, she enjoyed cooking for her friends and her six brothers. As a newlywed, she was thrilled to finally have her own kitchen and loved to cook, host meals and plan menus. Like many of us, Faigy loves to pore over cookbooks and cooking magazines for inspiration, and she fused her family’s Hungarian dishes with international and American favorites to create her own unique style.

 

Faigy is the food editor of Taste Magazine and Voice of Lakewood and a regular Kosher.com contributor. She started her Instagram page ­­in 2017 (which now has over 19,000 followers!), started the column “Munching with Menachem” with her son in Circle magazine in 2018, and launched her own brand of spice blends, Union.

 

A “Peaceful, Calm, and Manageable” Passover

 

 

Faigy’s long-awaited debut cookbook My Pesach Kitchen is unique in that it combines easy, delicious recipes with a detailed guide to preparing for Pesach, complete with menu planning, shopping lists, “turning over” checklists, and organizers to make Pesach “peaceful, calm, and manageable.” Writing the cookbook was a family affair, with her four children Menachem, Avromi, Chavi, and Devora serving as recipe testers, prop assistants, and helping with the book’s mouthwatering photography (as a family photographer, Faigy says her transition to food photography came fairly naturally).

 

The more than 130 easy, family-friendly recipes in My Pesach Kitchen include dips and appetizers, salads, soups, fish, poultry, meat, sides, desserts, and Chol Hamoed recipes.

In My Pesach Kitchen, you’ll find classic comfort food like chopped liver, chicken soup with matzo balls, and potato kugel alongside fun new twists like roasted sweet potato fries with maple aioli, pulled beef fries, a blackened fish bowl, and eggplant rollatini.

 

 

I tried Mommy’s Roasted Eggplant, with its meltingly tender cubes of garlicky roasted eggplant and red pepper, Oven-Roasted Matbucha, and Eggplant Boats with “Tahini.” The sweet-and-savory Roasted Butternut Squash was a revelation as I usually fix it the same tired way, but I loved the combination here of cinnamon with onion power (I used smoked paprika and subbed Aleppo pepper for the cayenne as I love the smoky depth it imparts). I also loved Faigy’s grandmother’s Paprikash Krumplit, a super-simple but amazingly delicious Hungarian comfort dish of potatoes, paprika, garlic, and onion.

There are plenty of mouthwatering mains, whether you’re looking at poultry (Potato Chip Schnitzel, Shabbos Chicken, Chicken Marsala, Tuscan and French chicken), meat (Rosemary-Garlic-Crusted Roast, Mommy’s Yom Tov Meat, Coffee-Rubbed Minute Roast, Pepper-Crusted London Broil with Chimichurri), or fish (Tomato-Pesto Sea Bass, Lemon Garlic Salmon, Brown-Buttered Halibut). And for dessert, Faigy offers her mom’s fabulous nut torte, frozen mousse cake, cakey brownies, brookies, fruit-based desserts, and nut-free alternatives.
