Yes, I can grill chicken in six minutes. I can pull together a salad in less time. But the grain? That just takes longer. There are definitely those days when I need to get dinner on the table in minutes. Here are four amazing dinners that you can make in minutes using the great convenience of Heaven & Earth 3 Minute Rice…a freezer must-have for those days that you’re simply in a pinch. -Victoria Dwek. 

Falafel Bowl

You can also prepare this dinner with grilled shawarma-spiced chicken instead of or in addition to the falafel balls.

If you’re making the Israeli salad, simply combine ½ finely chopped cucumber, 1 finely chopped pepper, ¼ finely chopped red onion, juice of 1 lemon, ½ teaspoon salt, and fresh parsley.

Add a sautéed onion to the rice if you have just a bit more time.

Ingredients

1 packet Heaven & Earth 3 Minute Brown Rice
Salt, to taste
6-8 falafel balls
1 cup Israeli salad
1/2 cup fresh parsley
Techina or Mighty Sesame Tahini (squeeze bottle), for drizzling

Red Cabbage Salad
1 cup shredded red cabbage
1 teaspoon oil
1 teaspoon sugar or Splenda
1 tablespoon vinegar
1/2 teaspoon salt 

Chickpeas (optional)
1 cup Gefen Organic Chickpeas
1/2 teaspoon Cumin
1/4 teaspoon smoked paprika
1/4 teaspoon turmeric
1/2 teaspoon salt

Chicken Caesar Bowl

This is one of my favorite “no time” dinners because it’s light, delicious, and satisfying. No one will care that dinner took five minutes to prepare. If you didn’t think that rice and coleslaw work together in a salad…you just haven’t tried it yet. It’s one of my favorite combinations. This meal takes about two minutes of hands-on time and just a few more of cooking time.

Ingredients:

1 8-ounce bag Romaine lettuce 

1 – 1 and 1/2 pounds thinly sliced chicken cutlets
Salt, for sprinkling
Black pepper, for sprinkling

4 cloves garlic, crushed or 4 cubes Gefen Frozen Garlic
1 packet Heaven & Earth 3 Minute Jasmine Rice
1 cup coleslaw
1/2 cup croutons

Hoisin Chicken with Broccoli Rice

Besides for the speed and convenience, one of the reasons I keep Heaven & Earth Brown Rice in my freezer is because sometimes I only need a little bit, especially if I’m preparing a different dinner for my husband than I am for my kids. And it’s very hard to cook a little bit (not to mention  getting an extra pot dirty). It’s perfect for those times when I’m preparing a dish for only one or two members of the family.

This one-pot meal takes minimal time and makes minimal mess. Hoisin sauce is so flavorful on its own…you won’t need to take out half the pantry to make a sauce.

Ingredients:

2 tablespoons sesame oil

1 onion, diced

2 cups frozen chopped broccoli

Salt, to taste

1 packet Heaven & Earth 3 Minute Jasmine Rice

1 lb dark chicken cutlets

⅓ cup hoisin sauce

2 tablespoons water

Sesame seeds, for sprinkling

Green and Orange Salmon Bowl

What do you do if the whole family wants white rice and one person wants brown? Or vice versa? You don’t need to take out a second pot. Take out another pot or a packet of Heaven & Earth 3 Minute Rice.

What about if it’s supposed to be your night off from cooking and it’s pizza night for the kids–but the grownups still want a healthy meal? With this dinner, you can still eat well without too much time or effort.

1 ½ lbs sweet potato or butternut squash fries

Salt, pepper, and smoked paprika, for sprinkling

1 pound skinless salmon fillet or cubes

Salt and pepper, for sprinkling

Juice of ½ lemon

1 packet Heaven & Earth 3 Minute Brown Rice

1 5-ounce container baby spinach

1 ripe avocado, sliced

Green Dressing:

1 cup lite mayo

6-7 basil cubes

4 parsley cubes

¼ teaspoon dried dill

1-2 tablespoons white wine vinegar

1 teaspoon salt

Pinch black pepper
