With just one cup of sugar and a quarter cup of oil, these muffins are whole-grain, heart-healthy, and most importantly delicious!
1 cup brown sugar
3 cups oat bran cereal
2 cups flour
1 cup oats
3 teaspoons Haddar Baking Powder
2 teaspoons baking soda
1 teaspoon salt
4 eggs
2 cups Haddar Applesauce, chilled
8 tablespoons Bartenura Olive Oil or canola oil
optional: raisins, Gefen Chocolate Chips, or blueberries
Line two 12-cup muffin tins. Blend together dry ingredients. Add eggs, chilled applesauce, and oil. Mix by hand until well blended. Stir in optional ingredients, if desired.
Spoon batter into lined muffin tins. Let stand 10 minutes. Bake at 350 degrees Fahrenheit for 20 minutes or until muffins begin to turn golden brown. Do not over-bake. Keep refrigerated, if not using right away.
