Arugula Pomegranate Crunch Salad

Ingredients

Salad

  • 1 (5-ounce) package pre-checked arugula, spinach, or baby kale

  • 1 avocado, sliced into cubes

  • 1/2 small red onion cut into thin half moons

  • 2 small cucumbers, cut into thin half moons

Dressing

  • 1 teaspoon kosher salt

  • 1/4 teaspoon black pepper

Directions

Prepare the Arugula Pomegranate Crunch Salad

1.

In a small bowl, whisk together ingredients for dressing until well combined.

2.

Toss salad ingredients together with dressing. Serve immediately.

Notes:

Dressing can be prepared in advance and stored in the refrigerator.
