Quick and easy banana muffins with few ingredients. Yields approx. 15 muffins.
5 bananas
1/2 C oil
3/4 C sugar
1/4 C non dairy milk such as oatmilk
1 t baking soda
2 1/2 C flour
Pinch of salt
Mix bananas on low until mush. Add remaining ingredients.
Spray a 1/4 C measuring cup with oil. Scoop 1/4 of batter into lined muffin tins.
Bake at 350° for 40 minutes.
