This is not your typical chicken and rice dinner. The pineapple chunks add a fresh, fruity taste and the scallions, celery and slivered almonds add color and crunch.
Brown Rice and Chicken Salad

Cook the Rice
Cook rice according to package instructions, omitting margarine. Transfer to large bowl.
Drain pineapple, reserving juice.
Stir pineapple, chicken, celery and scallions.
Combine 1/4 cup reserved pineapple juice and mayonnaise, mixing well.
Stir into rice. Chill at least four hours prior to serving.
Add almonds just before serving.
