The chips melt into this cake, giving delicious flavor as well as a candy like burst of sweetness tried the recipe using light spelt flour and light olive oil with fabulous results Caramel chips can be used instead of butterscotch chips
1 cup oil
1 cup brown sugar
1 cup sugar
1 T. vanilla sugar
4 eggs
3½ cups Wonder Mills flour
1 T. baking powder
1 cup orange juice
1/4 cup butterscotch chips, divided
1. Preheat the oven to 350
2. In a bowl, mix the oil with the sugars
until they’re combined.
3. Add the eggs one at a time, mixing after each addition.
4. Combine the flour with the baking
powder, and add them to the batter, after
nating with the juice. Mix with a fork until
the batter is smooth. Don’t overmixd
5. Mix half a cup of chips into the batter
6. Transfer the batter to a lined 9×13″ pan
7. Sprinkle the remaining chips over the cake.
8. Bake the cake for 1 hour or until a tooth
pick inserted in the center comes out dry.
