I always love a classic Greek salad but prefer a balsamic vinaigrette over the standard Greek dressing. I challenged myself to duplicate the dressing I love from one of my favorite cafés. The result — a salad that is hands down my family’s favorite.
Café-Style Greek Salad

Prepare the Salad
Preheat oven to 350°F (180°C).
Slice sweet potato into small sticks. Drizzle with olive oil and sprinkle salt to taste.
Place in oven for 25-30 minutes, watching carefully so that it doesn’t burn.
Place all salad ingredients in a bowl. Whisk dressing ingredients together and pour over salad.
Toss until well blended.
