muffins or cake, this is the only way I like my carrots
6 eggs
3 cups sugar
3 cups finely grated carrots, packed firmly
1 1/4 cups oil
1/2 cup orange juice
2 tsp. vanilla extract
3 3/4 cups flour
1 tsp. baking powder
1 tsp. baking soda
2 tsp. cinnamon
Beat whole eggs and sugar until fluffy. Add grated carrots, oil and vanilla extract. Add remaining ingredients, mixing well. Pour into 9×13″ baking pan and bake at 350 for 1 hour.
