Ingredients

Tabouli

  • 2 cups of ‘riced’ cauliflower

  • 1/2 cup pomegranate seeds

  • 1/2 cup chopped pistachios

  • 1/2 cup herbs (parsley, cilantro, mint) chopped

Dressing

  • 1 tablespoon olive oil

  • 1 clove garlic, finely chopped

  • 2 tablespoons lemon juice or juice of one lemon

Directions

Prepare the Cauliflower Tabouli

Mix salad ingredients together.

2.

Whisk the dressing until well combined and drizzle over salad.
