1/2 cup of oil
1/2 cup of peanut butter
3/4 cup of sugar
1/2 cup brown sugar
1 egg plus 2 egg yolks
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon baking powder
2 cups flour
1/2 cup strawberry jam or jelly
Preheat oven to 350 degrees Fahrenheit. Set up two pans with baking sheets, set aside.
In a mixer put in the oil and peanut butter, let combine. Add sugar and brown sugar into the mixture. Put your egg and egg yolks into the bowl and beat it until creamy. Add vanilla extract, baking powder and baking soda. While those ingredients are mixing you are slowly going to add flour into the bowl a little at a time, until a dough forms.
Use a one tablespoon or 1/2 tablespoon to measure how much dough you need (for the balls you need it to be in a ball but for the shapes you have to flatten it down a little bit) Make two of each shape so there will be a second side for the sandwich.
Put it in the oven for 10 minutes. When done baking, let cool for five minutes.
When cooled, spread jelly on one side of the sandwich then attach the remaining side so that it forms a sandwich.
