Chunky and flavorful, this soup is the perfect dinner on a cool winter night. Chock-full of veggies, the addition of chicken adds flavor, and makes this soup a complete dinner in just one pot.
In a four-quart pot, sauté onion, parsley roots and carrots for 30 minutes.
Add rest of ingredients and cook another one and a half hours over medium heat.
