When you realize it is 5:00 PM and need a quick but filling dinner this is very easy to prepare in no time and is delicious, too!
1 small onion, sautéed in oil (I sauté a lot of onions at once, freeze in containers and spoon out when I need some)
pack of beef pastrami cold cuts (5-6 slices of any kind pastrami) or ready cubed
container chickpeas (store-bought)
Forest Shrooms Salt
black pepper
6 mini par baked baguettes (PAS)
Defrost sautéed onions in a pot on low flame with some oil or sauté 1 small onion in oil until soft and golden.
Cube pastrami in bite size pieces and add to sautéed onions,
Spice with Forest Shrooms Salt & black pepper. Mix for a few minutes until flavor is absorbed.
Add the container of chickpeas, mix lightly (avoid mushing peas). Turn flame off.
In the meantime, bake mini baguettes according to package instructions, remove from oven and set aside to cool.
Flip the baguettes, cut the top (flat part), remove the inside carefully to avoid making holes, fill with chickpeas/pastrami mixture and cover with flat piece.
Optional – Secure with bamboo knot, skewer or decorative toothpick. Serve with lettuce on the side.
