Chocolate Chip Mocha Muffin

Ingredients

Muffin Ingredients

  • 1/3 cup oil

  • 1 tablespoon baking powder

  • 2 teaspoons coffee granules dissolved in 1 tablespoon hot water

  • 1/2 cup Gefen Mini Chocolate Chips

Streusel Ingredients

  • 1/2 stick margarine (use soy-free, if needed)

  • 1/4 cup sugar

  • 3/4 cup Mishpacha Flour

Directions

To Make the Muffins

Preheat oven to 350°F.

Combine the egg, honey, brown sugar, flour, oats, juice, oil, baking powder, and coffee dissolved in water. When all ingredients are well incorporated, add chocolate chips. Divide batter evenly into a muffin tin lined with 12 cupcake holders.

In a small bowl, mix the streusel ingredients by hand. Top each muffin with 1 tablespoon of streusel.

Bake for 20 minutes or until a toothpick inserted into the center of a muffin comes out dry.

Tips:

These muffins freeze very well.

Notes:

Chef’s Note: Customize this muffin to your specific taste. Add cinnamon instead of the coffee, or walnuts or raisins instead of the chocolate chips. It’s all up to your imagination.
