A coconutty, unusual cookie that is a delight to savor.
Directions
1. Preheat oven to 300°F.
2. In a large bowl, mix margarine with sugars until the mixture has a grainy texture. Scrape down the sides of the bowl. Add eggs and vanilla extract and beat until light and fluffy.
3. In a separate bowl, combine flour, baking soda, and salt; add this to the sugar-egg mixture in the bowl, mixing until combined. Add coconut and macadamia nuts and mix at low speed until just combined. Do not over-mix.
4. Drop by rounded tablespoonfuls onto ungreased cookie sheets, two inches apart. (If smaller cookies are preferred, drop by one and 1/2 teaspoonfuls.)
5. Bake for 20 to 25 minutes. Transfer immediately to a cool, flat surface.
