1. Place cans of coconut cream in the refrigerator for at least 30 minutes. Remove only the coconut fat that has settled at the top of the can; the coconut water is not needed for this recipe.
2. In a large mixing bowl, use an electric mixer to whip the coconut cream, sugar, vanilla, and cocoa powder until smooth and well combined.
3. Pour into parfait cups, top with shaved chocolate, and allow to set in the fridge for at least 30 minutes before serving.
