This colorful marinated salad packed with veggies is a guaranteed hit.

Ingredients

For the Salad

  • 2 cups frozen broccoli, thawed and drained

  • 1 large zucchini, unpeeled, cut lengthwise into quarters and sliced

  • 1 yellow pepper, cut in strips

  • 2 carrots, peeled and thinly sliced

  • 1 red onion, thinly sliced

For the Dressing

  • 2/3 cup sugar

  • 2/3 cup Pesach vinegar

  • 1/4 cup oil

  • juice of 1/2 lemon

  • 1/4 cup water

  • pinch of salt, or to taste

Directions

Prepare the Salad

1.

Combine vegetables in a large container with a lid.

Blend dressing ingredients in a separate bowl and pour over vegetables. Cover container and shake well. Marinate overnight.
