Yummy sweet (healthy) crunchy oat cookies.
1/4 c coconut oil
1/4 c olive oil (can use 1/2 c coconut oil and omit olive oil)
1/4 c coconut sugar
1/8 c (2T) maple syrup
1/4 t vanilla extract
1/2 c whole wheat flour
1/2 t baking powder
1 c rolled oats
1/4 t fine sea salt
Preheat oven to 350º F (180º C).
In mixer, cream oils and sugar until light and fluffy. Add maple syrup and vanilla. Add remaining ingredients and mix to combine.
Make balls of dough and place on cookie sheet lined with baking parchment, leaving space between cookies to flatten. Press down dough with tines of fork to make cookies approximately 1/4″ (a bit over 1/2 cm) thick. Bake 12 – 15 minutes. Remove from oven, slide paper with cookies onto cooling rack .
