This creamy, crunchy, cabbage salad is absolutely delicious and is packed with flavor! Perfect for summer parties, or even paired with pita or crackers to make up a light and refreshing lunch.
4 cups shredded purple cabbage
1/2 cup diced celery
1/2 cup diced onion
1/2 cup diced sour pickles
1/2 cup vegan mayonnaise
2 tablespoon Gefen Maple Syrup
2 teaspoons dijon mustard
salt, to taste
pepper, to taste
garlic powder, to taste
optional topping- toasted pumpkin seeds
Combine all ingredients except seasonings in a bowl in no specific order.
Mix really well.
Add salt, pepper, and garlic to taste.
I personally like storing it in the fridge for a couple of hours to let the flavors seep in. You can also eat it right away. Either way, it tastes delicious.
Add your favorite crunchy seeds or nuts as a topping right before serving.
