This soup is my number 1 comfort food. My mom made it for us on the first day of school, whenever we had a big test, or just needed a hug. This soup is basically a warm hug in a bowl!
2-3 TBSP butter/margarine
1 onion ,diced
1 carrot, diced
1 tsp salt
1/2 tsp onion powder
1/2 tsp garlic powder
1/8 tsp paprika
1/4 tsp pepper
4-5 Yukon gold potatoes, peeled and cubed (depending on how small or large your potatoes are)
4 TBSP flour
4 C water
1/4 C alphabet noodles
3 TBSP sour cream
Melt butter or margarine in a medium pot on medium heat.
Sauté onions about 5 minutes, then add carrots. Sauté until onions are translucent. Add spices and mix. Add potatoes. Mix. Add flour and mix until incorporated. Add water. Cook for 20 minutes. (It boils quickly. You might need to let the lid sit halfway off the pot at this time). Add alphabet noodles. Let cook another 5 minutes.
Take out 1 cup of the soup and set aside in a bowl. Add in the sour cream to the bowl and mix thoroughly. Then add the soup mixture back into the pot and continue cooking until the noodles are cooked through- about 10-15 more minutes.
