1. Preheat oven to 400 F.
2. Line a cookie sheet with parchment paper.
3. Wash, peel, and remove anything undesirable from the vegetables .
4. Cut the zucchini’s, peppers, and carrots into 3-4” sticks.
5. Strain the can of mushrooms.
6. Place all vegetables onto prepared cookie sheet ( zucchini sticks, pepper sticks, carrot sticks, whole mini purple onions and whole mushrooms.
7. Sprinkle with olive oil, salt and black pepper.
8. Bake for an hour. Serve hot.
