Eggplant Babaganoush

  • 2 onions

  • 1 medium eggplant

  • 3 to 4 cloves garlic

Directions

1.

Sauté onions and garlic very well in a generous amount of oil.

Bake eggplant wrapped in silver foil on 400 for about an hour, until it’s soft.

3.

Combine all ingredients.

Blend if desired, but not necessary.
