Emeral Green Cabbage Salad

  • 14 oz bag shredded cabbage

  • Scallions

  • Red onion, finely diced

  • Dried apricots, diced

  • 1 fresh nectarine cut into small chunks

  • 1/4 cup each sunflower seeds, pumpkin seeds, silvered almonds, chopped pecans

  • 1-2 tbsp olive oil

  • Pinch or 2 hot paprika or cayenne pepper

  • 1 tbsp brown sugar

  • Salt and pepper to taste

  • 1/2 package fresh dill

  • 1/2 cup oil

  • 1/4 cup water

  • 1/3 cup+1 tbsp honey

  • 3 1/2 tbsp vinegar

  • 3 1/2 tbsp lemon juice

  • 5 cloves minced garlic

  • 3/4 tsp kosher salt

To make garnish: place all ingredients in small frying pan and heat together for about 10 minutes over a low/medium flame. When the nuts start to pop, they’re ready.

2.

To make the dressing: place all ingredients in the food processor fitted with the knjve blade. Blend for a few minutes until mixture turns green.

3.

To serve: add dressing right before serving.
