Prepare the Frankfurters with Rice and Eggplant

1. Sauté onion and eggplant in oil, 15 to 20 minutes.
2. Add rice and sauté with the vegetables. Add water and cook about 15 minutes.
3. Add frankfurter slices, salt and continue cooking until all water is absorbed.
