Ingredients

Frankfurters with Rice and Eggplant

  • 2 tablespoons oil

  • 1 large onion, diced

  • 1 medium eggplant, peeled and diced

  • 3/4 cup rice, uncooked

  • 1 and 1/2 cup water

  • 5 frankfurters, cut in slices

  • salt, to taste

Directions

Prepare the Frankfurters with Rice and Eggplant

1.

Sauté onion and eggplant in oil, 15 to 20 minutes.

2.

Add rice and sauté with the vegetables. Add water and cook about 15 minutes.

3.

Add frankfurter slices, salt and continue cooking until all water is absorbed.
