1 Tblsp sugar
1/4 cup all purpose flour
2 Tblsp onion soup mix
2 tsp salt
1/4 tsp ground black pepper
1/4 cup (1/2 stick) butter
2 large onions, thinly sliced
6 cups water
6 baguette slices
1 cup shredded Mozzarella cheese
Mix sugar, all-purpose flour, onion soup mix, salt, and ground black pepper in a small bowl. Set aside.
Ina large pot, melt butter. Add onions and caramelize abt 25 minutes on low heat, mixing occasionally. Add the flour mixture to onions and stir to create a roux. Slowly add water to roux, and continue mixing. Bring to a boil.Reduce heat and simmer 30 to 40 minutes.
Preheat oven to broil. Ladle soup in 6oven-safe bowls. Float a baguette slice on top of each soup. Sprinkle abt 2 Tblsp of shredded mozzarella cheese into the bread slices. Place filled bowls onto a cookie sheet. Place cookie sheet in oven under broiler. Broil 4 minutes. Serve immediately.
