Classic homemade peanut chews are battered and fried – the perfect Chanukah treat. Submitted by Gitty Wolf
1/2 cup corn syrup
1/2 cup sugar
1/2 cup peanut butter
2 and 1/2 cups Rice Krispies
3/4 cup flour
1 teaspoon baking powder
3 tablespoons sugar
1 egg
6 tablespoons soy milk
oil, for frying
Mix corn syrup and sugar in large microwave safe bowl. Microwave for one to two minutes, then add peanut butter and mix well. Pour in Rice Krispies and stir. Form small sized balls out of the mixture, and place them on a parchment lined tray.
Now, make the batter. In a small bowl, combine flour, baking powder, and sugar. Add egg and soy milk, then mix until smooth.
Heat about two inches of oil in a deep frying pan. Dip one peanut chew ball into batter and roll until evenly coated. Fry for about one minute and then flip. Fry for an additional minute.
Repeat with all the balls. Serve fresh.
