The flavor in these french fries is developed by slowly cooking crushed garlic in olive oil. This infuses the oil with a garlicky flavor which you then use to coat your fries. Feel free to use the frozen french fries when you’re in a pinch or just not in the mood to cut your own.
6 Yukon gold potatoes, washed, dried and sliced into french fry-like slices
1/4 cup olive oil
7 cloves crushed garlic
1/4 cup grated parmesan cheese
3/4 teaspoon salt
additional salt
Preheat your oven to 450 degrees Fahrenheit.
Pour your olive oil into your pan along with the crushed garlic. Add a pinch of salt.
Turn on your stove to a medium low heat, and cook for about 5 minutes until your garlic resembles the color of light brown sugar.
Place your potatoes into a large bowl, and pour your oil and garlic mixture over it THROUGH A SIEVE! Set aside your crispy garlic bits.
Lay your potatoes onto a parchment lined baking sheet (preferably real). Do not overcrowd them.
Bake until the potatoes have developed a nice golden brown color, about 45 minutes.
Sprinkle them with a generous pinch of salt. (I use truffle salt.) Pour over the parmesan and the garlic bits.
