1small shallot
2medium plum tomatoes halved

1/2tsp salt
1/4tsp pepper
In the bowl of a food processor fitted with the S blade, shred shallot. Add tomatoes and red wine vinegar. Slowly add the olive oil in a thin stream while blending. Add the salt and pepper, then chill in the refrigerator for at least two hours.
