A classic carrot, sweet potato, and prune tzimmes.
Directions
1. Heat oil in a medium saucepan. Gently fry chopped onion until beginning to brown.
2. Add carrots and sweet potato and saute 2 more minutes.
3. Add prunes, honey, orange juice, and salt to taste. Bring to a simmer, cover and simmer for 40-45 minutes, stirring occasionally, until vegetables are tender.
