Ingredients

Grated Vegetable Kugel

  • 2 Large Potatoes

  • 2 Large Carrots

  • 1/2 Parsnip

  • 2 Celery Stalks

  • 2 Zucchini

  • 1 Onion

  • 2 Garlic Cloves

  • 3 Eggs

  • 1 C Potato Starch

  • 1 Teaspoon Baking Powder

  • 1/2-1/2 C Oil

  • Salt and Pepper

1. Preheat oven to 375°F (190°C).

2. Grate all Vegetables.

3. Mix the eggs together and add. Sift Starch over carefully and then add in baking powder and salt. Mix well.

4. Pour into a greased pan and back 65-75 minutes, until brown and crispy.
