prepared brown rice
1/2 English cucumber, chopped
1/4 red onion, finely diced
1 cup grape tomatoes, halved
1 pepper, diced
1/2 cup Gefen Black or green olives, sliced
4 ounces Ta’amti Feta Cheese
1/2 cup Gefen Light Mayonnaise
1/3 cup lemon juice
1/2 teaspoon salt
dash of crushed red pepper
1/4 teaspoon oregano
1/4 teaspoon Gefen Dried Dill
2 cloves garlic, crushed or 2 cubes Gefen Frozen Garlic
Microwave rice for three or four minutes (depending on the strength of your microwave) according to package instructions. Season with salt to taste.
Prepare dressing. Whisk together all ingredients.
Assemble your bowls. Add rice to the bottom of two bowls. Top with cucumbers, red onion, tomatoes, pepper, and olives. Grate feta cheese directly on top. Drizzle with dressing.
