with its bursts of flavor in each mouthful, this soup is sure to be a favorite! This soup is customizable to whatever you have in your refrigerator, and whatever spices you need to use up! Perfect for shabbos, Tom Tov, or any day of the week, this soup will soon be your go-to vegetable soup z,,,
2 Medium yellow Onions
2 tablespoons of oil divided
5-8 cloves of garlic
2 medium zucchini’s
3-4 carrots
2 small Idaho potatoes
1 medium sweet potato
half of a lemon
2 tablespoons salt
freshly ground pepper to taste
thyme, basil, parsley if desired to sprinkle
2 bay leaves
1/2 tablespoon paprika
4 cups vegetable broth
4 cups water
dice zucchini’s,carrots,potatoes,sweet potato, and onion.
chop the garlic into medium sized pieces
add one tablespoon of oil oil to the pot and leave it to heat up
sauté onion on a medium flame until browned
when the onions are browned add the rest of the diced vegetables and chopped garlic
add in remaining oil.
stir for about 10 minutes
add in broth and water. stir
add all spices and herbs and stir.
let it cook for about 2 hours (more or less depending onto soft you want the vegetables to be )
if you would like, blend the soup with an immersion blender until smooth or almost smooth.
