Diets The great thing about this recipe is its simplicity and the absence of additives like citric acid and sugars. It’s also way more cost effective to make your own elderberry syrup. The bioflavonoids found in elderberries destroy viruses like influenza on contact, and also quickly build up the immune system. This syrup is enhanced by star anise, which is like nature’s Tamiflu. That’s because star anise contains shikimic acid, which helps fight the flu (and is a key ingredient in Tamiflu). The sweetener in this syrup is raw honey, which also lends impressive antiviral and antibacterial properties. You can order dried elderberry and star anise in bulk from Amazon.
Yield: 1–2 cups
Dosage: 1 tablespoon, 3–4 times a day
1 cup organic dried elderberries
3 and 1/2 cups water
3/4 cup Heaven & Earth Raw Honey
1 star anise
In a medium-sized saucepan over medium heat, cook dried elderberries, star anise, and water for one hour, reducing it by half. Let cool completely.
Strain the syrup into a bowl, pressing the juice out of the berries with a wooden spoon and discarding the star anise. (You can also squeeze the berries through a nut milk bag.)
Gently stir in the raw honey and pour into glass jars. Store in the fridge for up to three weeks.
